I adore a spicy yogurt curry however I find it hard to make a good one. This recipe is pretty quick, easy and sports only a couple ingredients. Start your rice cooker and start chopping.
- 1 x Onion Chopped
- Garlic 2 x Chopped
- Ginger (half a little finger chopped)
- Turmeric 1 Tablespoon
- Coriander 1 Tablespoon
- Salt and Pepper to Taste
- Spinach a bunch (washed and chopped)
- Plain Yogurt (although I personally do prefer a creamy Greek Yogurt)
In a great cast iron pan, oil, onion and spices until browned and aromatic.
Add spinach and wait until it begins to wilt. Add yogurt.
Serve over a bed of rice or with Naan (I really have to try this amazing recipe one day...). This dish is also great with the mint chutney on the side.
It may be simple, but it sounds delcious :)

you might even like this version of spinach and yogurt
Just wilt spinach with 1 slit green chilli,1 crushed garlic clove, salt and 1/2 teaspoon cumin powder .
Add thick yogurt and it is really delicious with rice and even indian breads.
