The following recipe is a delightful one-similar to the galette but not a galette. A crostada is an Italian breakfast item or rather afternoon snack best served with a cup of strong coffee. I served it first at a brunch and the recipe is from Giada's Family Dinners.
1.5 Cups Flour
2 Tablespoons Sugar
Juice and grated Zest of 1 Lemon
1/4 Teaspoon Salt
10 Tablespoons Butter cut into chunks-Unsalted and Chilled (I placed my butter in the freezer for an hour)
3 Tablespoons Iced Water
3/4 Cup Apricot Jam
A Handful of Sliced Almonds to top off as well as Powdered Sugar for Dusting
Combine the sugar, zest, and salt in a food processor. Add chilled butter chunks and pulse until ingredients resemble a corse meal. Add ice water bit by bit pulsing until clumps form (I quickly realized clumps were not forming-I removed the mix from the food processor and had to inspire clumps with my hands while adding the remainder of water).
Clump into a ball, flatten, cover in plastic wrap and refrigerate for 1 hour.
Preheat oven to 400 F.
Roll dough out onto wax paper that sits on a baking sheet.
Spread jam onto dough allowing a 1-2 inch border for folding up when complete (as seen on finished crostada).
Bake about 40 minutes-until crostada is golden. Allow to cool for 10 minutes. Top off with sliced almonds and powdered sugar.
Very nice looking recipe. I love apricot jam. This should taste good too.
