For Christmas day, we all agreed around here that there must be a
gorgeous looking cake in the background (of the kitchen) in which we could admire and then feast on
after the Christmas meal. We chose Coconut Cake (recipe soon) with the Cream
Cheese Frosting. It was more gorgeous than the photo allows and it tasted well....
1 Pound Cream Cheese
2 Sticks Unsalted Butter
3/4 Teaspoon Vanilla
1/4 Teaspoon Almond Extract
1 Pound Powdered Sugar
Use an electric mixer and combine cream cheese, butter (softened to room temp), vanilla and almond. Add Powdered sugar but do not mix too much.
Easy! And there were plenty of takers to lick the mixing spoons and bowl.
