I thought my cake baking career was fini until I had a go at Ina Garten's Coconut Cake recipe on Christmas day. My career, it appears, has been revived.
This cake is not only beautiful to look at but rivals its own beauty in taste.
- 3 Sticks Unsalted Butter at Room Temp
- 2 Cups Sugar
- 5 Eggs at Room Temp
- 1 1/2 teaspoons each of Vanilla Extract and Almond Extract
- 3 Cups Flour
- 1 Teaspoon Baking POwder
- 1/2 Teaspoon each Baking Soda and Salt
- 1 Cup Milk
- 4 Ounces Shredded Coconut
- Preheat to 350 F and grease two 9 inch round cake pans-then line them with wax paper and dust with flour
- With a mixer, cream butter and sugar until fluffy
- Crack the eggs one at a time, mix, scrape then add another until all eggs have been added and mixed
- Add Extracts, if then the mix looks curdled or odd-no worries
- In another bowl, mix flour, baking powder, baking soda and salt
- Combine two bowls while mixing alternating and ending with the dry ingredients
- Mix until just combined and then fold in coconut with spatula
- Pour batter into pans and smooth the tops
- Bake in the center of the oven for 45 to 55 minutes
- Cool for 30 minutes then turn cakes out
- Assemble and frost!
- Serve at Room Temperature

Holler, Thank you so much. I was so relieved it turned out to tell you the truth. Christmas was so relaxed and enjoyable... just as it should be. Were you able to enjoy your holidays? I noticed there was a lot of snow where you are at! That must have been nice...
