Considering that I do not like mashed potatoes, I was intrigued when I saw the recipe you posted. I think I will definitely try those mashed potatoes and I am quite sure I will enjoy them! Thanks for the recipe.

Katy, I have not tried them yet myself because the post was a guest post. You must let me know how they turn out and if you have any ideas about what might make them better!

I finally tried making these. I made them twice - once with the sage and the second time with rosemary. The rosemary was really delicious and it was a great complement to the butternut squash. I also used vanilla soymilk instead of milk. I also tried adding a little splash of heavy cream - definitely was a nice accent. I highly recommend the rosemary over the sage. Thanks for posting this recipe!
