Corn Bread

Corn bread is delicious on its own- but for an extra rich kick I like to add feta and kalamata olives to the recipe. 

  • ½ Cup Yellow Cornmeal
  • 1 Cup Flour
  • ¼ Cup Sugar
  • 1 Tbsp Baking Powder
  • 1 Tsp Salt
  • 2 Eggs
  • 1 ½ Cups Milk
  • ¾ Cup melted Butter
  • ½ Cup Chopped and pitted Kalamata olives
  • ½ Cup Feta cheese 

Heat the oven to 400 F Degrees. 

In a large bowl mix the cornmeal, flour, sugar, baking powder and salt.

In a separate Mixing Bowl combine Eggs, milk and butter. 

Combine the two bowls into one and stir until moist. Add the olives and feta cheese. 

Pour batter into 8x8 pan and bake for 20 minutes
